These rich, buttery cookies are excellent with morning coffee, as a dessert or as a delectable snack. They're easy to make, too.
Cream together:
1 c. sugar
1 c. butter (no substitutes)
Add 2 egg yolks.
Gradually fold in:
2 c. flour mixed with ½ c. chopped pecans
Press half of mixture on the bottom and along the sides of a 6" x 8" pan. Spread cookie dough with a layer of preserves or jam (about 1/8" thick or to taste) in your choice of flavors. Break up the remaining cookie mixture and scatter over the top. Pat down gently. Bake at 350 for 45-60 minutes until very slightly brown. Do not over bake.
